Why I built this.

In 2019, I couldn't sleep. It was 2am and a headache was turning into something I didn't recognise.

Within seconds, a cold rush ran down my right side. I couldn't move my arm or lift my leg. I was hospitalised for three days while doctors worked out what was happening.

The diagnosis: Multiple Sclerosis.

I'd always been active. Cycling. Gym. Fitness. I paid reasonable attention to what I ate. But overnight, my relationship with my body changed completely.

Recovery took two years of physical therapy. I still live with allodynia — a condition where touch on parts of my face and head registers as pain. My body and I have been in ongoing negotiation ever since.

The diagnosis made me genuinely obsessed with one question.

Can food actually make a difference to inflammation?

The answer, as far as I can tell, is yes. Not dramatically. Not as a cure. But consistently and meaningfully — when the right ingredients are used at the right doses.

I leaned on protein bars during recovery. They were convenient. I needed the protein as I lost muscle rapidly. But almost all of them came with compromises I didn't want — sugar spikes, inflammatory oils, sugar alcohols that sat badly, labels that sounded clean but weren't in practice.

I'd find one that looked promising. Flip it over. Invert sugar syrup. "Natural flavours." Curcumin at 15mg — a dose so low it's essentially fictional.

Put it back. Try another one. Same story.

That low-grade frustration — of knowing what you need, knowing what the research says, and not being able to find something that actually delivered it — is what became Solás.

So I started experimenting.

What began as necessity turned into hundreds of iterations. Cycling trips with friends as unwitting guinea pigs. Starting over when something wasn't right. Obsessing over bioavailability. Reading research papers on curcumin absorption at midnight. Testing combinations until the flavour and the function worked together — not despite each other.

I had one specific goal: a genuinely anti-inflammatory protein bar, no added sugar beyond fruit, high protein from clean sources, and something that actually tasted good. Not a dessert. Not a gimmick. Something dependable you could reach for every day without compromise.

That process took years.

That process became Solás.

Solás is an Irish word.

It means light, comfort, or relief.

It was the word that felt right throughout my recovery — and it's the word I keep coming back to when I think about what this bar is for.

Not performance. Not extremes. Just something that works with your body, quietly, every day.

You don't need MS to want a bar that works with your body instead of against it.
